Description
Warm baked apples filled with honey-drizzled walnut halves and blueberry-covered goat cheese make for a cozy, flavorful dessert. This easy recipe combines creamy, crunchy, and fruity flavors for a delightful fall treat!
Ingredients
Scale
- 4 large baking apples (like Honeycrisp or Fuji)
- 1/4 cup walnut halves
- 1/4 cup goat cheese (cut into small chunks and rolled in blueberries)
- 2 tablespoons honey
- 1/2 teaspoon cinnamon
- A pinch of salt
- Optional: extra blueberries for garnish
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Prepare the Apples: Core the apples, creating a small well in the center while leaving about 1/2 inch at the bottom to hold the filling.
- Prepare the Goat Cheese Bites: Take small chunks of goat cheese and roll each piece in blueberries, gently pressing to coat the cheese.
- Stuff the Apples: Place a few walnut halves in the bottom of each apple, add a blueberry-covered goat cheese chunk, and repeat until the apples are filled. Drizzle a bit of honey and sprinkle cinnamon and a pinch of salt over the filling in each apple.
- Bake: Place the stuffed apples in a baking dish. Cover with foil and bake for 25-30 minutes or until the apples are tender. Remove the foil for the last 5 minutes to achieve a golden top.
- Serve: Drizzle with additional honey if desired and garnish with extra blueberries.
