Best Summer Fruit Salad
Not the usual fruit salad. One bite, and you’ll know this is the best summer fruit salad! Since we grow fruit, it’s exciting to have this spectacular recipe to show off the fruits of our labor!
The fruit dressing that marinates in the mixture adds a sweet fresh zing that keeps bringing people back for another serving until it’s all gone!

Description
The dressing amplifies the natural fruit flavors especially when the salad marinates for a few hours before serving. The fruit in the recipe represents what is in season in July on our farm. Feel free to substitute the fruits in this recipe with any fruit you have available to make a fresh delicious side.
Ingredients
- 1/2 cup fresh orange juice
- 1/4 cup fresh lemon juice
- 1/4 cup packed brown sugar
- 1/2 teaspooon grated orange zest
- 1 teaspoon vanilla extract
- 3 cups sliced bite size fresh pineapple
- 2 cups sliced bananas
- 3 cups blueberries
- 2 cups sliced dark cherries (pits removed)
Instructions
- Mix orange juice, lemon juice, brown sugar, orange zest, lemon zest, and vanilla extract. Set aside.
- Slice pineapple into bite-size pieces and add to bowl.
- Slice dark cherries into halves while removing the pits and add to bowl.
- Add sliced bananas and blueberries to bowl.
- Gently mix the fruit slices then add the dressing.
- Refrigerate for 2 – 3 hours before serving.
Notes
The lemon juice in the dressing has a high citric acid content that protects cut fruit from oxidation or turning brown. When you’ve completed the fruit mixture add the sauce immediately to preserve the bright colors of the salad.
